Baked purple sweet potato in casserole
Overview
For more than ten years, I have been fond of cooking in casseroles, porridge, meat stew, chicken, duck, fish, mutton, beef, ribs, etc. Sometimes there are a lot of guests in my house, so I cook a lot of porridge and meat. The previous casserole was small, so I could only use a steamer. I always felt that the steamer made a little less flavorful, so I decided to buy a larger casserole.

Prepare the casserole and washed purple potatoes.

Wipe the casserole with cotton cloth (do not wet it with water).

Cut two pieces of tin foil larger than the pot body and set aside. Put the tin foil into the pot, press it tightly with your hands to stick to the inner wall of the casserole, and wrap the top around the edge of the casserole.

Another piece of tin foil is also put into the pot, overlapping it crosswise to form a straight tube, one circle is firmly attached to the inner wall of the casserole, and the top wraps the edge of the casserole.

Find a grill slightly smaller than the mouth of the pot and place it in the pot.

Place tin foil on the grill (to prevent purple potato juice from staining the pot and grill).

Add the washed purple sweet potatoes (there are a lot of purple sweet potatoes baked together).

Cover the pot and turn on the heat (the tin foil higher than the mouth of the pot helps to drain excess water steam out of the pot)

Roast over high fire.

After 30 minutes, turn the purple sweet potato over (be careful because the casserole is very hot, remember to wear insulated gloves to prevent burns, and use a steamed bun tong to turn over to prevent scalding).

Then turn off the heat on medium heat for 30 minutes and use the residual heat to simmer (the specific time can be selected flexibly according to the size of the purple sweet potato and the amount of heat). (Don’t open the lid, make full use of the heat stored in the casserole pot to simmer the purple sweet potato. This time, the heat is probably set low, and the purple sweet potato is not burnt, but it will be cooked when you poke it with chopsticks. If you like it to be burnt, you can turn up the heat or bake it longer.)
