Braised Pork with Dried Cauliflower
Overview
Dried cauliflower is fresh cauliflower that has been soaked in water and then dried. It was autumn, and I saw many people discussing around a large cart of cauliflower. When I went there, I realized that such good cauliflower only cost 1 yuan per kilogram. It was so cheap that it was like picking vegetables to eat. But you can’t just eat every day when it’s cheap. So I didn’t want to buy more. But when I saw many people selling large and small bags, I asked how I could eat so much. An old aunt told me that it can be dried and eaten in the winter, and it is delicious even when stewed or roasted. I just bought a few kilograms, and after drying, there won’t be much left. I have been cleaning up the house these days, so I put away the dried cauliflower. I thought I would stew meat and try the taste of braised meat with dried cauliflower. Cauliflower is cool in nature and sweet in taste; it can nourish the kidneys and essence, strengthen the brain and bones, and strengthen the spleen and stomach. It is mainly used to treat long-term physical weakness, flaccid limbs, tinnitus and forgetfulness, weak spleen and stomach, and developmental delay in children.

Ingredients: Dried cauliflower, pork belly, ginger, star anise, white kumquat, herbal fruit, cooking wine, soy sauce, chicken essence, salt, dried red pepper, rock sugar

Soak the dried cauliflower in cold water, wash and slice the ginger

Cut the pork belly into small pieces

Heat the pan and stir out the oil, pour out the excess oil

Add star anise, white cardamom and ginger and stir-fry

Add cooking wine, soy sauce, chili salt and stir-fry until fragrant

Add dried cauliflower

Add water and rock sugar and bring to a boil over high heat

Turn to low heat and simmer covered for about 40 minutes
