Prepare materials
-
Fry the cornstarch until cooked and spread it into the baking pan
-
Wash the eggs and dry them, use the rounder end to press out small indentations
-
Soak the gelatine slices in ice water until soft and set aside. Mix the egg whites with sugar and lemon juice, and use an electric whisk to beat until wet peaks
-
Mix sugar, water and starch syrup into a small milk pot, cook over low heat to 120 degrees, when the temperature reaches 120 degrees, add the soaked gelatine slices, stir quickly and melt
-
After the gelatine melts, add sugar water to the meringue and beat quickly until evenly distributed, then change to low speed and beat until the temperature drops to about 45 degrees (this step was too fast, so I didn’t have time to take a photo, embarrassing...)
-
Put the prepared meringue into a piping bag, squeeze it into the flour pit, and squeeze out small balls
-
Use a toothpick to remove the air bubbles, add some meringue to make it red, and then squeeze on the meat claws (4 small red dots + a heart)
-
When the squeezing is finished and the little paws are almost cold, use a spoon to scoop up the powder on the side and sprinkle it on the surface to cover the entire marshmallow to prevent it from sticking. In this way, the fleshy and tender cat paw marshmallow is ready~
-
Put it in the coffee and watch the marshmallows slowly melt
