Mom’s Taste of Scallion Pancakes
Overview
I remember when I was a child, in the spring, my mother always planted a patch of green scallions in front of and behind the house. At that time, my naughty sister and I always wanted to destroy them. My mother told the children not to destroy them. When the scallions grow up, we will eat fragrant scallion pancakes. Watching them grow up slowly, I seem to have smelled the aroma of my mother’s scallion pancakes! When the onions are picked, my mother always bakes pancakes with a bowl of egg soup. The taste is really delicious! The fried scallion pancakes I made today added onions to the fried scallion oil, which made the scallion flavor stronger. I hope you like it!

Ingredients
Steps
-
Wash and dry the scallions in advance
-
Onion diced
-
Pour vegetable oil into the pot, add onions and chives and fry slowly over low heat
-
Fry until golden and crispy, then turn off the heat
-
Dry the fried onions and chives into oil (I fried the scallions in enough oil to make two pancakes, then cool them and put them into a clean container so you can use them directly next time)
-
Pour 250 grams of ordinary flour into 100 grams of boiling water and stir into cotton wool. Pour 50 grams of cold or warm water into the remaining dry flour and mix well
-
After mixing well, cover with plastic wrap and let stand for 30 minutes (this time can be used to fry the onion oil. The steps written are reversed)
-
Sprinkle dry flour on the cutting board and divide the dough into three parts. Roll one part into thin slices, the thinner the better.
-
Spread oil on the dough, sprinkle a little salt evenly, and sprinkle with chopped green onion
-
Roll up along one end
-
Then roll it up tightly from one end inward
-
Roll into a round cake
-
Flatten it with your hands and use a rolling pin to roll it into a dough of moderate thickness
-
Pour a little oil into the pot and slowly fry it over medium-low heat. This amount of flour can make three palm-sized cakes, which is just right for a family of three to make breakfast. If you are making breakfast, put it in a crisper and put it in the refrigerator to freeze. You don’t need to defrost it when you take it out in the morning. Just put it in directly after the oil is hot
-
If you like the pancakes to be a little bit broken, use a wooden spatula to press the middle of the pancakes and turn them around a few times
