Peel the fresh potatoes and slice them slightly thicker. Soak the potatoes in water for half an hour, drain and set aside.

Cut the bamboo shoots into thin slices and cut the green pepper into sections. Boil them in water until raw and set aside

Heat the pan, stir-fry over low heat, and remove the oil from the pork belly. Fry until oil comes out and set aside

Over medium heat, add potato slices and fry slowly until brown on both sides. Remove from heat and set aside

Add all the ingredients to the oil in the pot. Stir-fry ginger, scallions, celery stalks, dried chili and turn to medium heat

Pour in chili sauce, light soy sauce, steamed fish soy sauce, and stir-fry until fragrant.
