Steamed scallops with garlic vermicelli

Wash and drain scallops. (Use a brush to clean the scallop shell, and remove the beard-like shell legs on the edge of the shell with your hands. If the shell legs are left on top, it will be impossible to make delicious scallops.)

Mix and mince green onion, ginger slices, garlic and chili pepper, chop green onion leaves and set aside.

Blanch the vermicelli in boiling water until soft.

Add a little salt and mix well (you can add a little soy sauce in this step.)

Place the scallops on the steaming rack and top with minced garlic, ginger, scallions, white pepper. (Chaotian pepper is mainly used to make the scallops look beautiful, so don’t use too much, otherwise it will affect the original flavor of the scallops themselves.)

Sprinkle the scallops evenly with a little salt.

Spread the vermicelli, cover and steam over high heat for about 10 minutes.

After taking it out of the pan, sprinkle with chopped green onion (you can pour soy sauce first and then sprinkle with chopped green onion), pour hot oil and serve.
