Clean the purchased pangasius fillet after thawing it. Cut into large pieces, add scallions, ginger slices, cooking wine, light soy sauce, vinegar, and salt. Wear disposable gloves to grasp evenly and marinate for more than 20 minutes.

After marinating, put it on a plate. Discard the onion, ginger and other seasonings inside. Then evenly pour a layer of steamed fish soy sauce, about 2 tablespoons. After the water in the steamer is boiled, steam for about 7 minutes, no more than 10 minutes.

Remove the excess water from the steamed fish on the plate or change the plate, add another spoonful of steamed fish soy sauce, and pour it evenly on top.

Add the onion and ginger shreds, heat the oil in a pan, add Sichuan peppercorns, and when the pepper is fragrant, pour it on top of the onion and ginger shreds on the plate while it is hot.
