Overview

Jinan's braised pork is unique and a local specialty. The meat of Jinan must be fat and lean, cut into several pieces per pound, tied into a handful with hemp rope, soaked in soy sauce, simmered over high heat and slow fire - it is fat but not greasy, thin but not woody, and has a mellow taste. A piece of meat, a pickled egg, and a piece of fried tofu are the standard lunch dishes for Jinan people.   1. Prepare the pork belly.
