【Jiangsu】Shredded radish with shrimp oil
Overview
I made tempura with Ecuadorian white shrimps, and I had some shrimp heads left over. I found shrimp paste inside, so I used them to make shrimp oil, which is great for stir-frying and making noodles!

Boil shrimp oil: Put an appropriate amount of corn oil in the pot, put the shrimp heads into the pot and simmer over low heat

Cook until the oil turns red and the shrimp heads are crispy

Use a sieve to filter out the shrimp oil, which can be used for cooking or noodles

This is cooked shrimp oil, don’t throw away the fried shrimp heads

I cut off all sides of my radish to make pickled radish

Cut the radish heart into thin slices and then shred the radish

Pour a little shrimp oil into the pot and heat

Add shredded radish and stir-fry for a while

Add fried shrimp heads and stir-fry evenly

Add a little cooking wine

Add some salt and white pepper, stir well, then add a little water and bring to a boil
