Use a meat grinder to mince the pork belly and ginger, add sugar, salt, oil, oyster sauce, an egg, mix well, then add the green onion, mix well and set aside!

Cut the lotus root into thick slices 3 mm thick!

Dip one side of the lotus root slices in flour.

Place the meat filling on the floured side and smooth it out!

Cover the lotus root slices with meat filling with another slice of lotus root! Press it tightly and dip both sides with appropriate amount of flour!

Heat the cold oil in the pan, add the lotus root clips, and fry until both sides are golden!

After frying the lotus root clips, add minced garlic, green onions, and chili peppers to the base oil and saute until fragrant, then pour in a bowl of juice (one spoonful of sugar, one spoonful of vinegar, one spoonful of soy sauce, one spoonful of cooking wine, appropriate amount of starch, and a tablespoon of water)
