Overview
Oatmeal is a common coarse grain in northern Shanxi. It contains low sugar and is suitable for people with diabetes. Oatmeal noodles can be made into a variety of foods. Oatmeal noodles are one kind of fish. They are named because their long and pointed ends resemble fish.

Soak the dried mushrooms in water, wash and cut into small dices, wash, peel and cut the potatoes and carrots into small dices, wash the parsley and cut into small pieces.

Wash the tomatoes and cut into small pieces.

Add an appropriate amount of boiling water to the oatmeal flour, stir evenly with chopsticks, and form into a dough without scalding your hands. Cover with plastic wrap and set aside to rest. Then take a piece of broad bean-sized oatmeal gnocchi and pinch it in the palm of your hand to make oatmeal fish. I used the leftover frozen ones from last time.
