Rock Sugar Pig Trotters
Overview
Pig's trotters are an ingredient that we often eat, and there are many cooking methods. They are quite delicious in soups, braised, etc. This rock sugar pig's trotters has been slightly improved according to our traditional cooking method. A few dried chili peppers are added, which is basically spicy, but it can also enhance the flavor. Rice wine is used instead of water, and the taste is really great.

Soak the pig's trotters in water for 4 hours, then wash and pick them up

Prepare all seasonings (cooking wine, light soy sauce, dark soy sauce, green onions, rock sugar, ginger, star anise and dried chili peppers)

First blanch the pig's trotters in cold water, then pick them up and wash them

In another pot, add some oil, add onion, ginger, and star anise and sauté until fragrant

Then add the pig's trotters and stir-fry until the flavor is released, then pour in the rice wine

Add light soy sauce and dark soy sauce and stir-fry until all colors are added. Add dried chili pepper

Add rock sugar

Pour everything into the pressure cooker

Press for 25 minutes

After the exhaust is complete and you can open it, leave it open for a few minutes to collect the juice and then turn off the heat
