Mapo Tofu
Overview
Mapo tofu is a dish that can be found in almost every restaurant, but for such a simple dish, there are not many that can be fried deliciously. Occasionally, I can eat delicious food outside, but it is indeed very rare.

Cut into 1*1 small cubes.

Cut the ginger into foam.

Chop the garlic into fine pieces.

Chop the chives into foam (separately separate the white and green parts)

The green part of chives.

Sauce: half a spoon of cooking wine, 2 spoons of light soy sauce, half a spoon of dark soy sauce, a little sugar, a little water.

Slightly blanch the water with salt water to remove the beany smell and prevent the tofu from breaking into pieces easily.

Put oil in the pot and heat it up.

Add onion, ginger and garlic into the pot and saute until fragrant.

Add bean paste and stir-fry until red.

Add tofu and stir-fry evenly.

Add the sauce.

Add the minced meat (I fried the minced meat in advance, so I put it in now. If it is not cooked, you can add the minced meat after adding the bean paste and frying until it turns red). Turn down the heat and simmer for 5 minutes.

Add the green part of the green onion.

Use high heat to reduce the juice, add pepper powder, salt and thicken the sauce.

If you like it spicier, you can add some chili powder or chili oil during the step of adding bean paste.
