Overview
When I was working in the countryside, because the village was far away from the township government, every time I went to the village to carry out work, I usually stayed in the villagers' homes for food and accommodation. The hospitable Hani villagers will kill a chicken to entertain us every time. The simple villagers don’t know what cooking is, and there are no seasonings except home-grown ginger and pepper. Therefore, when cooking chicken, the villagers will put some home-pickled radish strips into the chicken soup. Boil it and add some chili peppers, the sour, spicy and delicious chicken soup rice is delicious. At that time, after a day's work, I returned to the villagers' homes and ate a bowl of chicken soup rice cooked with pickled radish strips. All the fatigue disappeared. In the evening, I continued to work energetically with the villagers or chat about household chores.

Wash the chicken and chop into small pieces. Slice the ginger and pat the herbs into pieces. Boil a pot of water and set aside.
