Tear the gluten into shreds, cut the onion, ginger, and garlic into shredded ginger, slice garlic, and chop the green onion. Set aside.

Heat the pot first and then pour in the oil. When the heat is 70% hot, pour in the gluten shreds and fry them until they are slightly hard (it will be fine if the gluten is separated and not sticking together). Remove and control the oil.

Leave a little oil in the pot, add Sichuan peppercorns and fry until fragrant. Add onion, ginger and garlic and stir-fry until fragrant. Add gluten and stir-fry over high heat. Add cumin, chili powder, salt and sugar. Stir-fry for a while. Add chicken essence and serve. Place on a plate and sprinkle with coriander for garnish.
