Crucian carp and winter melon soup
Overview
I haven’t bought crucian carp for a long time. When I asked, I found out that the price had gone up to 11 yuan per pound. I said that last time I bought 9 yuan a pound, the fish seller looked at me and said, "You haven't bought fish in two months!" In fact, I would like to say that I often buy crucian carp for only five or six yuan a pound, and grass carp from three or four yuan to six and a half yuan now~ To be honest, it feels like I haven’t bought groceries in several years.

Steps
-
Wash the crucian carp, cut the back of the fish with a knife, cut the ginger into cubes and cut the green onions into sections.
-
Slice winter melon.
-
Pour oil into the pot, add a little salt and ginger slices to boil (add some lard)
-
Add crucian carp and fry.
-
Flip and fry and add the balsamic vinegar.
-
Give enough water at once (I will give you cold water)
-
Add the winter melon slices, cover the pot and cook.
-
Bring to a boil over high heat, then turn to medium-low heat and simmer until the fish is cooked and the soup turns white.
-
Season with a little salt and pepper, sprinkle with scallions and cook (the white melon turning transparent is also a sign of ripeness)
-
Put the soup bowl in the pot.
-
The winter melon melts in your mouth, the soup is fresh and the fish meat is tender.
