Prepare the raw materials in advance, choose the best sour bamboo shoots, and cut them by hand for a better flavor. The soybeans will taste better after soaking them overnight.

Pour a little oil into the pot, and when the pot is hot, add the soybeans and stir-fry until the soybeans are golden brown, then take them out of the pot and set aside (note: stir-fry constantly during the frying process, and control the heat to prevent the soybeans from being scorched until they have small black spots)

After cleaning the pot head, add an appropriate amount of oil again. When the oil temperature reaches 50%, add the sour chili and stir-fry

After the sour chili is sautéed, add the sour bamboo shoots and ginger one by one, stir-fry until the aroma comes out, then take it out and set aside.

Reheat the pan and add a little oil. When the pan is 50% hot, add the dried fish and stir-fry for a while (be careful not to cook for too long to prevent the dried fish from becoming too dry and hard)

After stir-frying the dried fish for a while, add the prepared sour bamboo shoots, ginger, sour chili peppers, and soybeans in sequence, add salt and light soy sauce, and add a few drops of white wine to make it more fragrant!

After stir-frying for a while, add about 50ml of water, cover the pot over medium heat and simmer. After simmering for 5 minutes, you can feel the charming aroma.

After simmering for 10 minutes, add garlic leaves and stir-fry over low heat. Finally, add a little chicken essence or monosodium glutamate, add garlic sprouts, stir-fry for a while and it's ready to serve.
