Clean the clams and soak them in salt water to spit out the sand (although they are cleaner when you buy them, I think it is better to soak them, haha).

Heat oil in a pan, sauté onion, ginger and garlic until fragrant.

Add oil and stir-fry clams.

Add spicy millet.

Pour a spoonful of light soy sauce, a spoonful of cooking wine, an appropriate amount of water, and stir-fry evenly.

Turn off the heat when you open the clam. If you cook it for too long, the meat will become old and the shell and meat will separate.

The seafood itself is salty, and light soy sauce is added, so no salt or chicken essence is added. Sprinkle with chopped green onions and serve.

Finished product. The clam meat is tender and very delicious.
