Prepare the required ingredients

Cut the tofu into cubes about 1 cm thick and soak in light salt water for 10 minutes

Beat the eggs, add a tablespoon of flour, mix well and set aside

Slice green peppers, red peppers, and carrots and set aside

Take out the soaked tofu and coat it with a layer of dry flour

Then lightly apply a layer of egg batter

Pour an appropriate amount of oil into the pot, heat it to 60% heat, add the tofu wrapped in egg paste, and fry over low heat until both sides are brown

Fry the remaining tofu one by one

Leave an appropriate amount of base oil in the pot, add shredded ginger and saute until fragrant

Add carrots and stir-fry for about 30 seconds until cooked

Then add red and green peppers

Add appropriate amount of cooking wine and stir evenly

Add a tablespoon of soybean paste

Add the fried tofu cubes and mix gently

Pour in an appropriate amount of water, bring to a boil over high heat, then turn to low heat and simmer for about 6-8 minutes
