Spicy screw meat
Overview
Every spring I make delicious screw meat several times. Spicy and delicious, all delicious. If you are a drinker, this dish is perfect as it goes well with both wine and rice.

Prepare ingredients.

Pinch the screw meat repeatedly with your hands, rinse and set aside.

Cut the green and red peppers into shreds and flatten the garlic with a knife.

Cut leeks into sections.

Pour oil into the pot and heat, stir-fry the ginger slices and garlic until fragrant.

Pour the screw meat into the pot and stir-fry several times. Add cooking wine, light soy sauce, oyster sauce, and salt and start stir-frying over high heat.

When the soup is almost dry, add chili shreds and leeks and stir-fry again.

Stir-fry the leeks until they are about eight to nine times ripe. Remove from the pot and serve on a plate.
