Midpoint Legend—Bean Paste Buns
Overview
I don’t really like sweets, but I occasionally buy a few bean paste buns. One bean paste bun with a cup of tea, a simple afternoon tea. There are many ways to wrap bean paste buns, and today is the simplest way. Some places like to mix the dough with matcha powder to make a green dough, and then wrap it into the shape of autumn leaves to become autumn leaf bean paste buns. Others can wrap it into elephant-shaped animals, such as hedgehog buns, piglet buns, panda buns, etc.

The ingredients are: 500g flour, 5g yeast, 250g cold water, 20g sugar, 10g lard

Weigh all the ingredients and mix them together

Knead the flour into snowflakes and let it sit for 2 minutes

Then continue to knead into a smooth dough

After kneading, cover with gauze and let rise for 20 minutes

Take advantage of this time to shape the bean paste filling into small balls for easy packaging later

After the dough has risen, take it out, then place it on the chopping board and continue kneading to release the gas

Then knead the dough into a long strip and sprinkle with appropriate amount of dry flour

Then cut the dough into small pieces

Then roll it out into a dough that is thick in the middle and thin around the edges, wrap it in the bean paste filling, and then close the opening. You can use any method as long as you close the opening

Place the smooth side up and place it in a steamer to rise

Let it rise until doubled in size before steaming. Use chopsticks to dot some red coloring before steaming
