Overview
Shanxi is the hometown of pasta. There are several ways to make noodles, and braised noodles is one of them. It is also the favorite pasta for us Shanxi people. The aroma and nutrition of the prepared appetizers blend with the noodles

Pick the stems of the beans, wash them, drain them and cut them into thin strips. Wash the tomatoes and cut them into pieces. Chop the green onions and garlic slices and set aside

Add 80° boiling water to the flour and stir it into a flocculent form. Stir while pouring the water

Knead the dough into a smooth dough, cover it and let it rest for a while

Knead the rested dough into a smooth dough and roll it into thin slices about 0.5 mm

Sprinkle appropriate amount of flour on the dough sheet

Roll up the dough sheet on the rolling pin

Cut into two sections from the middle and cut into noodles

Pour an appropriate amount of cooking oil into the wok and cook for 8 minutes. When hot, add chopped green onion and garlic slices and saute until fragrant. Add green beans and stir-fry

Fry the beans until they change color, add tomatoes

Add an appropriate amount of stock or boiling water to the ingredients, just don’t add too much to make the dish submerged

Cover the pot and simmer the noodles until cooked

When you see steam coming out of the pot, immediately lower the heat and simmer the noodles for about 15 to 20 minutes

Add appropriate amount of salt to the stewed noodles, stir in chicken essence and sesame oil and enjoy
