Wuxi Spare Ribs
Overview
Every time I see small ribs with cartilage in the butcher shop, I always pack a big bag and take it home irresistibly. There are always many choices for marinating, frying, braising, or stewing soup and porridge. Especially the delicious pork ribs always make the children happily finish a big bowl of rice. Wuxi Spare Ribs is one of the traditional famous dishes in Wuxi, Jiangsu Province. It is characterized by soft and tender ribs and salty and sweet gravy that goes well with rice. The traditional method is to fry the ribs first and then braise them. I just use a little more oil and fry the ribs until the aroma comes out, and then put it into the Datong rice cooker together with the sauce. You can easily use the rice cooker to make this famous restaurant dish♥

Mix the ribs and marinade evenly and marinate them for 2 hours (I usually marinate them the night before to make them more flavorful).

Put a little more oil in the pot than usual for cooking. When the pot is hot, add the marinated ribs to the pot and fry until both sides are golden brown.

Spread the spices on the bottom of the pot (scallions, ginger, garlic, cinnamon, star anise).

Add the fried ribs and add seasonings. Put it into the Datong rice cooker, put two cups of water in the outer pot, press the power button, wait until it pops up and enjoy.
