Beef and Braised Baby Potatoes
Overview
My favorite dish is the dish cooked by my mother. Because I learned this dish from my mother, it has the taste of my mother. My mother-in-law’s family has a piece of land that has a bumper harvest every year. This year’s small potatoes have come down. The best way to deal with fresh small potatoes is to eat them directly without peeling them. Then choose this dish:

Small potatoes, washed, no need to peel, steamed

Let cool and flatten with a knife to make it more delicious

The beef should be soaked in advance and the water should be changed several times during the process to make sure there is no blood at all.

Add cold water, cooking wine, vinegar to the pot, put the beef into the pot under cold water, boil the water to remove the foam

Remove, drain, and set aside

Prepare onions, ginger and garlic

Add oil to the pot, first add the star anise and stir-fry, then add the onion, ginger, garlic and cinnamon

Add beef and stir-fry

Add bean paste for the first time and stir-fry

Then add another bean paste (the amount is the same as in the picture above) and stir-fry, add dark soy sauce and light soy sauce

Be sure to add boiling water in this step, otherwise the texture of the beef will suddenly shrink and become unpalatable. Cover the pot, bring to a boil over high heat, and simmer over low heat for 90 minutes

Add potatoes, salt, sugar, and then start to reduce the juice over high heat

Turn off the heat and add chicken essence
