Naturally delicious rice dumplings
Overview
In addition to the Dragon Boat Festival, my hometown also makes rice dumplings on the Hungry Ghost Festival on July 15th. This time when I went home, I saw my mother making gray water rice dumplings. We just called them gray water rice dumplings. Gray water rice dumplings are made from the ashes obtained from burning firewood and filtered with boiling water. The resulting water is used to soak the rice. After soaking, the rice will be light yellow and will turn yellow and shiny when cooked. It has a soft and glutinous texture and a "crispy" feeling. It has the effects of appetizing, digesting, clearing away heat and detoxifying, and is suitable for all ages.

Put an appropriate amount of wood ash in a bamboo basket, boil a pot of boiling water, pour the boiling water on the wood ash, and place a jar below. The water flowing down is gray water, which is yellow in color. The water that comes out needs to be filtered a second time.

After the filtered gray water is left to settle, clean gray water is obtained, which is used to soak rice. The rice should be washed three times with clean water beforehand and then drained.

Soak the rice for about 24 hours, then take it out and drain some of the water before making rice dumplings. (Soak during the day, at least overnight)

Prepared rice dumpling leaves. (These are the leaves used to make rice dumplings in my hometown. They must be boiled and rinsed before they can be used)

First take a big leaf and hold it in your hand.

Put a layer of small leaves on top of the big leaves, and then lay two flat leaves in the middle.

Put appropriate amount of rice.

Fold the right side in first, then fold the left side back and pinch.

Then hold it with your right hand and fold it down. (If the free leaves are too long, you can cut some off)

One end is also wrapped in this way. (When it is turned over, the top will be in a staggered shape and the rice will not leak out)

Then put the middle section of cotton thread under the middle of the rice dumpling, and wrap the cotton thread back from the outer end of the rice dumpling to the middle.

Cook rice dumplings. Set the time according to the size of the rice dumplings. When cooking rice dumplings, turn them over once and put the top ones on the bottom.

You can take one and see if there are whole grains of rice in the middle of the rice dumpling, which will make it softer and crispier.
