Prepare the ingredients first

Heat oil in a pan and wait until the oil is hot. Add ginger slices (ginger to remove the smell)

Pour in the fish meat

Use a spatula to stir-fry, and pour in sweet wine (cooking wine is also acceptable)

Stir fry a few times, add cold water, cover the pot and cook for 10 minutes (high heat)

Cut the tofu into slices with a knife

After 10 minutes, add the tofu, cover and cook for another 5 minutes

After 5 minutes, open the lid and cook for 3 minutes (because the tofu will float to the top when it is cooked, and it will sink to the bottom when it is opened to make the tofu tender). After 3 minutes, add salt, green onions, a little sesame oil, and pepper, and it is ready to serve.
