Divide the dough into 9 evenly sized dough balls and roll them into rounds, then cover with plastic wrap and let rest for 15 minutes. Flatten with your hands to deflate and prepare for filling

Wrap the purple sweet potato filling, pinch and seal, let rest for 15 minutes, then flatten into a round cake shape with your hands

Use scissors to cut out 8 1cm long openings on the edge of the round cake, and place them on a baking sheet lined with greaseproof paper
