  1. Prepare materials.

  2. Rinse the liver with water and cut into thin slices. Add a small amount of salt and vinegar to the water and soak the liver for ten minutes. Slice the cucumbers and carrots.

  3. Take out the soaked liver, rinse it with water for a while, put salt, cooking wine, starch and liver in a bowl and marinate for ten minutes.

  4. Use cooking wine, dark soy sauce, salt and starch to make a juice and set aside.

  5. Heat oil in a wok over high heat and simmer the liver until it changes color. Set aside.

  6. Put a little oil in the pot, stir-fry onions, ginger, garlic, liver and stir-fry evenly. Add cucumbers, carrots and the prepared sauce and stir-fry for one minute. Add some water and stir-fry until no water comes out of the pot.
