Homemade egg rice roll

This recipe can make 3 servings of egg rice rolls, smooth and chewy egg rice rolls, a classic Cantonese breakfast.

Add the three kinds of powder to 400 grams of water and mix thoroughly to form a powder slurry (you can also mix it in advance in the evening and refrigerate it, and use a spoon to stir the powder slurry that sinks to the bottom in the morning).

Prepare a brush, two 10-inch pizza pans (if you don’t have a pizza pan, you can use a stainless steel flat plate instead), chopped green onions, eggs, and lettuce.

Pour a few drops of oil into the pizza pan and apply a thin layer of oil evenly with a brush.

Using a spoon as a weighing tool, pour a tablespoon of batter into the pizza pan (the pan is not completely covered with batter at this time, so turn the plate with both hands to spread the batter roughly on the plate), and sprinkle with a little chopped green onion.

Bring half a pot of water to a boil over high heat, put the pizza pan into the hot water with anti-scalding tongs, cover with a lid, and steam over high heat for about ten seconds.

Open the lid of the pot and see big bubbles in the rice paste, which means the rice rolls are steamed. Use anti-scalding tongs to pick up the plate.

Use a scraper to scrape around the edge of the plate, and then gently push it from the edge (as shown in the picture, the steamed rice rolls are thin and transparent).

Add eggs and use chopsticks to stir up the egg liquid (the plate is not big, so if the whole egg is put into the plate, the steamed rice rolls will be very thick. It is recommended to beat the eggs first. When pouring the rice slurry, you can pour a little egg liquid and mix it with chopsticks. One egg can steam 3 plates of thin and transparent egg rolls).

Use two pizza pans to alternately steam the flour slurry, and the homemade egg rice rolls are ready. Then brush the rice roll noodles with an appropriate amount of soy sauce for seasoning (there are instructions on seasoning in the tips).
