Lotus paste and red bean pie
Overview
The Mid-Autumn Festival is approaching, and I always make mooncakes during this time, but I personally don’t want to eat high-fat and high-sugar foods. When I saw my rectangular pie plate from the School Chef, I especially wanted to eat red bean pie. In order to make the mooncakes with fried lotus paste filling, I cooked the red beans and put them together. They were put together to make the pie core. There was no sugar added when the red beans were cooked, and the sweetness was only reflected by the sugar in the lotus paste. The pastry was made from mustard seed olive oil. This pie is actually much healthier than ordinary pies. I made two of them, and they were all destroyed after taking pictures. Because it is not very sweet, my husband also likes it very much and strongly requests to make it again.

Ingredients
Steps
-
Add twice as much water to the red beans and use the porridge setting of the rice cooker
-
Cook until beans are tender. The cooked beans in the baby porridge stall I used were very rotten. Don't break it, just use it whole. I cooked a lot of red beans, and I will make red bean puree for the rest
-
Take the lotus paste filling made before, take it out from the refrigerator, add light cream and mix well
-
Take the required amount of cooked red beans and add it to the stirred lotus paste
-
Just mix gently and evenly. It's okay to over-stir, but the beans will rot, but it won't affect the taste
-
After the pastry and water dough are mixed together, cover it with plastic wrap and leave it for about an hour. Specific recipe: Pastry recipe: 1. 15 grams of mustard olive oil and 30 grams of low-gluten flour to form a dough. 2. Water and oil dough: 15 grams of mustard olive oil, 23 grams of water, and 43 grams of flour to form a dough.
-
Wrap the pastry with water-oil skin and wrap it tightly
-
Roll into long strips
-
Roll up. Let it rest for about 15 minutes, then repeat steps 8 and 9, then roll it out and let it rest for a while.
-
Roll out the pastry, spread it on the pie plate, and press off the excess with a rolling pin. Xuechu's non-stick pie plate has a very good non-stick effect. You don't have to worry about demoulding. It can be completely demoulded very easily.
-
Put the prepared lotus paste and red bean filling. I like a lot of filling and a full filling. Then cut the excess puff pastry into strips and decorate the surface
-
After preheating the oven to 180 degrees, place it in the oven and bake for 25 minutes
-
Baked pie, unmoulded
-
If you cut it open, you will see that it is full of lotus paste and red bean filling, and it is not too sweet. It is a very healthy and delicious pie.
