Lotus leaf glutinous rice chicken
Overview
Lotus leaf glutinous rice chicken is a famous snack in Guangdong. Ever since I fell in love with food, I have wanted to make all the snacks in Guangzhou. Cut the chicken into small pieces and soak for half an hour, wash and drain, add a little salt, cooking wine, soy sauce, oyster sauce, sugar and bay leaves, mix well, and refrigerate overnight;

Wash the glutinous rice and soak it in cold water overnight;

Wash the lotus leaves and soak them in cold water overnight;

Cut the ham into cubes and soak the scallops, jujubes, mushrooms and ham cubes in warm water for at least half an hour;

Cut the mushrooms into cubes, shred the scallops, and add them to the soaked glutinous rice together with the ham and jujubes. Add 1 tablespoon of soy sauce and 1 tablespoon of lard and mix well. The scallops and ham dices both have a salty taste. There is no need to add salt to the rice. Add an appropriate amount of water for soaking the scallops. Don’t use too much water, just make it equal to the rice;

Pour into a cast iron pot and simmer over low heat for half an hour;

After the rice is cooked, stir it a few times to make the rice fluffier;

Take a washed lotus leaf and put some chicken;

Place a layer of cooked rice on top of the chicken;

Add another layer of chicken and shiitake mushrooms;

Wrap tightly, put the water in a pot and steam over low heat for about 30 minutes after the water boils;
