Jiao Liu Meatballs
Overview
Jiaoliu meatballs are a delicious traditional dish belonging to Shandong cuisine. What you eat is that it's charred on the outside and tender on the inside. The outer shell has been fried twice, making it charred and crispy. It is an essential delicacy during festivals.

Peel the lotus root, wash and cut into small cubes.

Add all the sauce in Seasoning A to the minced pork and mix well. Finally add the diced lotus root and mix well and set aside.

Chop onion and ginger into mince, mix all Seasoning B into sauce and set aside.

Use the tiger's mouth to squeeze out the meatballs and fry them in a 50% hot oil pan.

Fry until the meatballs float and turn golden brown, remove and set aside.

Continue to increase the oil temperature to 80% hot, pour in the fried meatballs and fry for half a minute, remove and set aside.

Leave some oil in the wok, add onions and ginger and stir-fry until fragrant.

Pour in the prepared Seasoning B sauce, then add a small bowl of water and bring to a boil.

Pour in water and starch to thicken the sauce.

Pour in the meatballs and stir-fry quickly until the sauce is evenly coated on the meatballs.

Remove from pan and plate. Sprinkle some chopped green onion.
