Today I’m making yeast pie. Dissolve the yeast powder in warm water and knead the dough. The pie dough is relatively soft, so it will be a little sticky when turning it.

Knead the dough together and add half a spoon of corn oil and knead it evenly. It is a little sticky and does not need to be smoothed. Cover with plastic wrap and let rise for half an hour.

Cut the eggplant into cubes, add a spoonful of salt and marinate for 10 minutes to kill the moisture.

Squeeze out excess water from the eggplant cubes. Add chopped green pepper, ginger powder, five-spice powder, light soy sauce, and oyster sauce and mix well.

This is a critical step. Add a spoonful of oil to the pan and heat until cooked, add in the mixed diced eggplant and stir-fry until cooked through. After stir-frying with cooked oil, the aroma of eggplant and green pepper is stimulated, and it will leave a fragrant taste in your mouth.

Drain the eggplant and set aside. Knead and deflate the risen dough, divide it into 6 small portions and simply roll into a round ball and apply a layer of oil.

Flatten the dough into a shape of beef tongue, put the filling on one end and divide it evenly. The main methods of pie making include lifting, pulling and rolling.

The operations are completed in sequence. This will make the pie filling even. If you are in a hurry, you can wrap it up like a bun and flatten it.

Gently flatten it with the palm of your hand. Do not use a rolling pin as it may break the skin easily.

Heat the pan with cold oil, add the remaining corn oil to heat the pie. You can press the middle with your finger to adjust the size.

After putting it down, don't turn it over at will. Cover the pot and fry over medium-low heat for an average of 3 minutes on each side. After frying one side, flip over and fry the other side. When fried in this way, it will be golden in color, crispy on the outside and tender on the inside.

Fry until both sides are golden brown and place on absorbent paper to remove the oil.
