Prepare the ingredients.

Cut green onion into sections, shred ginger, and cut tofu into cubes.

Heat oil in a pan and stir-fry onion and ginger.

Add the fish head and fry for a few seconds on each side.

Add bean paste and stir-fry over low heat until fragrant.

Add cooking wine, light soy sauce, dark soy sauce, water, tofu and sugar.

Bring to a boil over high heat, then reduce to medium to low heat and simmer for ten minutes.

Finally sprinkle some green garlic.
