[Roast diced pork with peas]
Overview
When I was a child, I especially liked to put some salt and lard in a bamboo tube in the countryside, cut the grass outside, peel peas outside, put it in a bamboo tube and cook it over the fire. It was very delicious. Growing up, I basically liked eating peas. Peas are very nutritious. The lysine contained in peas is one of the essential amino acids for the human body. It can promote human development, enhance immune function, and improve the function of central nervous tissue.

Steps
-
It is best to choose pork belly that is half fat and half lean
-
Chop the bean paste into fine pieces; chop the pickled pepper and ginger into fine pieces; cut the ginger and garlic into rice; cut the dried sea pepper into small sections; cut the string pepper into small sections; use a knife to cut the fungus into small pieces
-
Cut the meat into 1 to 5 square dices; separate the fat and lean ones
-
Heat oil and add peppercorns. Sauté
-
Add the diced fat meat first and stir out the oil until the meat turns light yellow, that’s it
-
Add lean meat and stir-fry together. There’s basically not much water vapor, so that’s it
-
Push the meat to one side of the pot, and stir-fry the bean paste, ginger, garlic, pickled pepper, star anise, and dried chili knots in the bottom of the pot until the color is bright red
-
Stir-fry the diced meat together for 2 minutes
-
Boil the soup, wait for the water to boil, and add peas and diced carrots. Pour in appropriate amount of soy sauce and salt
-
Turn on low heat and cook for an hour. Then pour in the fungus and cook for 2 minutes.

It’s time to cook. Isn’t it very simple
