Peel the fresh lotus root and cut it into thin slices of about three millimeters. Connect the two slices without cutting them and set aside. Chop the pork and add minced ginger, green onion and salt, light soy sauce and thirteen spices. Mix well. Use chopsticks to carefully put the mixed minced meat into two connected lotus root clips and squeeze them flat. Place them in place and set aside. Then use flour, water, an egg, a small amount of salt and chopped green onion to make a batter. It should not be too thin, otherwise it will not hang up.

Roll the lotus root slices with meat in the batter, then put them into a 50% hot oil pan, add the batter one by one, and wait on low heat to avoid frying. I use rapeseed oil made by my hometown, and the fried things are golden in color and fragrant.
