Shaanxi people look at it - Qishan Saozi Noodles

Overview

I have been married to my husband for more than ten years, and I have always been in love with the pasta made by my mother-in-law. Simple flour will always turn into delicious food in my mother-in-law's deft hands: pulled noodles, braised noodles, fried noodles, spinach noodles... No matter which one, it can always easily tempt my stomach. But among the many kinds of pasta, the most unforgettable thing for me is the noodles made by my mother-in-law. Every time I eat the noodles, I can't get enough of one bowl, hehe! I went back last weekend, and my mother-in-law started preparing noodles again at noon. This time, I picked up my phone and took pictures while learning. I recorded the detailed instructions for everyone. Do you want to learn? Please read below:

Steps

  1. Knead the dough with warm water and try to make the dough as hard as possible, so that the rolled out dough will be stronger. After the dough is mixed, add plastic wrap and let it rest for 10 minutes;

  2. While the noodles are resting, cut the carrots and long beans into dices (you can also add tofu, garlic sprouts, fungus, etc.) and set aside;

  3. This step is the key point. The key to whether the noodles are delicious or not depends on whether they are chewy or not. Roll the noodles into a slightly thick round shape;

  4. Cut the noodles into thin strips. I probably won’t be able to learn this skill in my lifetime. Thank you for your hard work, mother-in-law!

  5. Spread all the cut noodles out on the chopping board. In order to prevent sticking, sprinkle some flour or cornmeal;

  6. Prepare the flowers, which are the side dishes sprinkled on top after the soup is prepared; today I used eggs and garlic sprouts (you can also use leeks instead). Our children helped to beat the eggs and mix them well, haha!

  7. Spread the eggs into egg pancakes and cut them into small diamond-shaped pieces. Cut the garlic sprouts into small cubes and set aside;

  8. This step is also very important when cooking and preparing the diced vegetables. First stir-fry the various diced vegetables cut earlier and set aside. Prepare a pot to boil water. When the water boils, pour in the freshly stir-fried vegetables. Add the diced pork (I will reveal the recipe another day, hehe). Then add various seasonings and balsamic vinegar and turn to low heat;

  9. Pour the cooked noodles into a bowl, add the saozi soup, sprinkle with flowers, and a delicious bowl of saozi noodles is ready! Is there anyone who is so greedy?
