Soak the rice noodles in warm water for half an hour.

In the meantime, prepare other ingredients, beat eggs, mince garlic and scallions, cut green scallions and leeks into sections, peel and devein shrimps.

Put the peanuts in the oven at 130 degrees and bake for 10 minutes. Let cool and then chop.

This is soaked rice noodles. It will turn from translucent to white, but it is best not to over-soak, otherwise it will be lumpy when fried.

Heat the pan with cold oil over medium heat.

Add the minced garlic and green onion and stir-fry until fragrant. Add the rice noodles, add a tablespoon of warm water and stir-fry evenly.

Add Thai sweet and spicy sauce and stir-fry evenly.

Add the shrimp and continue to stir-fry.

Set the rice noodles aside and pour in the egg mixture.

Cover the eggs with rice noodles and cook for about a minute.

Stir-fry evenly, add onions, leeks, bean sprouts, and chopped peanuts, stir-fry evenly and serve.
