Scallop Sausage Fillet
Overview
This pancake sandwich is simple and easy to make. It has the soft texture of steamed buns and the shape of scallops. Usually the pancake sandwich is stuffed with meat and vegetables, but I only put a small piece of sausage, but it was praised by everyone. When eating, open the shell and you will be surprised to find that there is scallop meat inside. Although it is not real scallop meat, this is a sausage made from tuna meat, and the umami flavor blends well with the scallops.

Yeast dissolves in water

Put flour and milk powder in a basin

Add caster sugar

Mix well first

Pour in the yeast water and mix into a flocculent form

Knead the dough with your hands. It will be rough at first. Turn the bowl upside down to cover the dough and let it rest for 5-10 minutes

Continue kneading into a smooth dough and ferment at room temperature until it doubles in size

Take out the fermented dough to deflate, knead for a few minutes, and roll into a long strip

Cut it into 7 equal parts. If there are no big air bubbles in the cuts, it proves that your dough has been kneaded

First make the small dough into a round shape, then shape it into an oval shape

Roll into oval shape

Spread a thin layer of oil on 1/2 of the area

Fold down

Use a scraper to press out vertical lines. Be sure to press them deeper

Pinch both ends and pinch them inwards

Press the protruding part in the middle downwards and pinch both ends tightly, otherwise it will crack when steamed

Open the shell and put sausage slices in the middle

Place the cooked scallops on oil paper and put them in a steamer. Wake up for about 15-20 minutes

After the water in the pot boils, place the steamer basket and steam over medium-low heat for 10 minutes. After steaming, turn off the heat and continue to simmer for 4 minutes before taking off the lid
