Laba Garlic
Overview
Laba garlic, as the name suggests, is garlic soaked on the eighth day of the twelfth lunar month. The soaked garlic must be placed in a cooler place to allow it to absorb the flavor and change color little by little, until the white garlic turns into emerald green. The brown vinegar also became darker in color and stronger in flavor, with the spicy flavor of garlic melted into it. This garlic is best opened on the night of New Year’s Eve and used with Chinese New Year dumplings. It’s quite delicious!
