Overview
I really like pickled beans, but you can’t buy them here. They can only be planted in spring and harvested in summer. In winter, they can only be replaced by green beans. Green beans can be bought all year round. It is convenient and easy to make sauerkraut. But please note that the green beans must be cooked or fried before they can be eaten. If the green beans are not cooked well, they will be poisonous. Be careful.

Remove the heads and tails of the beans, wash them and air-dry them. Don’t let the water be too full.

Put the seasonings and water into the pot, boil the water, and simmer for 10 minutes to allow the ingredients to fully develop the flavor. Then add sea salt until it is saturated. Don't use too much water, just enough. Then let the soup cool.

Put the string beans into the bottle, filling it as full as possible.

Pour in the cool water and put a plate on top to prevent the beans from floating to the level, so that the beans will not be exposed to air and rot quickly. Tighten the lid, put a date label on it for those who are not good at remembering, and put it in a place at room temperature until the beans turn yellow. It will take about 6 to 10 days. After 6 days, check every day to see if there is any discoloration.
