Wash the fresh pork skin, put it into a pot of cold water, boil it for about 3 minutes, take it out and wash it.

Use a small clip to carefully remove the remaining pig hair on the surface.

Use a knife to scrape off the grease on the surface of the ginger skin and then rinse with water.

Prepare star anise, bay leaves, cinnamon, pepper, ginger and other spices.

Cut the processed pork skin into thin strips.

Put the pork skin, ginger pieces, spice balls, cinnamon, etc. into the pressure cooker, add sugar, salt, cooking wine, and light soy sauce.

Add about 2-3 times the water of the pork skin, cover, bring to a boil over high heat, then turn to low heat and cook for 30 minutes.

Peel broad beans and blanch them in water.

Drain and set aside.

Put the cooked pork skin and broad beans into a food processor and blend for 2 minutes.
