Wash the mushrooms, stir-fry them, and cut them into appropriate sizes.

Wash the leeks and cut into 3 cm long sections.

Peel and slice garlic, cut red pepper into sections and set aside.

Heat the wok, add cooking oil to heat, add garlic slices and red pepper and stir-fry until fragrant. (A little more oil and garlic slices are needed)

Add the mushrooms and stir-fry for a few times, then cover and simmer over medium-low heat until the mushrooms are cooked. (Simmer for three minutes)

Add the leek segments and stir-fry until cooked.

Add salt and chicken essence, stir well and turn off the heat before serving.
