Hubby's favorite. This is much easier for me than other methods. The taste is very spicy and fragrant.

Wash the eel and cut it into sections of about five centimeters. Marinate slightly with salt, cooking wine, and starch.

Set the wok over high heat, add cooking oil and heat to 180 degrees, add the eel segments and stir-fry until the eel segments curl up and the surface moisture dries up. Saute Pixian bean paste, ginger slices, garlic and green onions until fragrant.

Add water, salt, soy sauce, cooking wine and bring to a boil over high heat.

Reduce heat and simmer until garlic softens.

Finally, add MSG and water starch, reduce the soup over high heat, and then put the pot into bowls.
