Multiple steps for more crispiness - soda biscuits (wrapped crispy method)
Overview
I have wanted to make soda biscuits for a long time. I think they are healthy and not sweet and not greasy. I found many methods on the Internet and they are not difficult. However, there are some that are wrapped in puff pastry and some that are directly formed. I wanted to make a delicious one for the first time to boost my confidence, so I made the puff pastry cookie. I thought it should be delicious. After baking it, I was not disappointed. It tastes delicious! Crisp! Savor it carefully and you can taste the sweetness of the flour. It is not as greasy as sugar biscuits and it will not make you fat. My little Zeze can even eat a piece of it by himself

-
Knead the pastry ingredients together to form a dough.
-
Cover the dough ingredients with plastic wrap and ferment at room temperature until the volume becomes slightly larger.
-
Roll the dough material into a rectangular shape.
-
Fold one side from 1/3 to the middle, and fold the other side from 1/3 to the middle.
-
Fold the dough into a rectangular shape and place the pastry dough in the middle. Flatten the pastry so that it forms a sheet.
-
Turn over one side of the dough and cover it with the pastry, and turn the other side of the dough over and cover it with the pastry. Pinch both ends with your hands so that the pastry is completely wrapped in the dough.
-
After wrapping, roll it into a large dough again. Repeat step 5 again and roll out into dough. The rolled out dough should be about 2 mm thick and rectangular, with the corners cut off.
-
Use a fork to prick the dough with evenly spaced holes.
-
Divide it into even squares, each piece should not be too big. You can also use a printing die to cut out other shapes.
-
Arrange into a baking tray and place in a warm place for final fermentation. Ferment until the dough becomes slightly thicker and then bake in the preheated oven. Bake the middle layer at 180 degrees for about 20 minutes. Bake until the biscuits are very hard when pressed to indicate they are done.
