Remove the head and tail of the hairtail, wash and cut into approximately 2-inch sections. Sprinkle a little salt and cooking wine and marinate for 15 minutes.

During the pickling process, prepare green onion segments, ginger slices, and garlic slices.

Prepare a bowl, add 1 tablespoon cooking wine + 2 tablespoons soy sauce + 3 tablespoons sugar + 4 tablespoons vinegar + 5 tablespoons water, mix well and set aside.

Drain the marinated hairtail segments with kitchen paper towels, dip them in a thin layer of flour, and shake off the dry flour.
