Stir-fried bacon with hot pepper
Overview
Stir-fried bacon with hot peppers, and suddenly found that the remaining bacon also contained lean meat. As for the seasoning, I used onions, ginger and garlic, Sichuan peppercorns to increase the spiciness (purely a personal preference), cooking wine to remove the fishy smell and a very fresh taste, sugar and chicken essence to enhance the freshness - I always feel that adding a little sugar to enhance the freshness is better than simply using chicken essence.

Cook or steam the bacon, cool and cut into thin slices, cut onion, ginger and garlic with a knife, and set aside pepper.

Cut the bell peppers into diagonal rings, try to cut them as thin as possible, they are easy to cook and look good. Mix one spoon of cooking wine (to remove the fishy smell), one spoon of very fresh soy sauce (to enhance the freshness), and a quarter of the sugar (also to enhance the freshness) into a sauce and set aside.

Heat the pan with cold oil, and use a little less oil, because the bacon will produce oil. When the oil is hot, add the bacon slices and stir-fry until the oil is transparent, roll it up slightly, and set aside.

After the oil in the pot is hot, add onions, ginger, garlic, and peppercorns and stir-fry over low heat until fragrant.

Increase the heat, add the bell pepper and stir-fry until slightly soft.

Add the bacon slices, add the seasoning and mix well, then add an appropriate amount of salt and a tablespoon of water and mix well, turn off the heat, add chicken essence and bring to the pot.
