【Guizhou】Garlic Spare Ribs and Bean Curd

Soak the ribs in water for half an hour

Remove from water and set aside

Pour appropriate amount of oil into the pan, add ginger slices, star anise, and peppercorns and sauté until fragrant

Stir-fry the pork ribs and add two teaspoons of cooking wine

When the ribs are stir-fried until golden brown, add 2/3 teaspoons of bean paste and a small handful of chili segments and stir-fry together

Add half a teaspoon of dark soy sauce for color, add garlic cloves and stir-fry

Pour into a casserole pot, add enough water to cover the ribs, and add one-third of a teaspoon of pepper

Cover the lid, bring to a boil over high heat and simmer over medium heat for about 30 minutes

Add beancurd sticks, seasoning with 1/3 teaspoon chicken powder, cover and simmer over low heat for about ten minutes
