Overview

The scallion rolls my mother made when I was a kid were really delicious. I made them for the first time today, but I didn’t expect them to be quite successful. My husband ate three of them in one go

Steps

  1. First, mix the noodles and ferment them in an air-conditioned room until they double in size

  2. Place the fermented dough on the chopping board and knead it back and forth to remove the air bubbles. You can spread a thin layer of flour on the chopping board to prevent the dough from sticking to the chopping board. Knead it into a long strip and cut it into two parts

  3. Chop a handful of green onions, add salt and pepper (thirteen spices are also acceptable) and an appropriate amount of cooking oil, mix well and set aside to taste

  4. Spread the noodles into a rectangular shape and add the chopped green onion on one side

  5. After rolling it into a long strip, cut it into pieces with a knife and arrange the shape of the flower roll and put it aside

  6. Cut all the noodles according to the previous steps. Cut the rolls and set aside to rest for 10-20 minutes. Add water to the pot and arrange the rolls. Bring to a boil over high heat, then turn to low heat and steam for 30 minutes. Turn off the heat and wait for 5 minutes. Lift the lid and remove from the pot
