Cut off the shrimp whiskers, use a shrimp gun, and cut off the tail to remove the shrimp line.

Peel the lettuce and cut into cubes, wash and set aside the mushrooms.

Cut green and red pepper into small pieces and set aside.

Cut onions into cubes and set aside.

Cut lotus root into thick slices and soak in water.

Slice ginger, smash garlic, and cut green onion into sections.

Boil water in a pot, add lotus root slices, lettuce, mushrooms, and green and red peppers in order. Bring the water to a boil again and simmer for about ten seconds. Remove and set aside.

Heat oil in a pan, add onion, ginger and garlic until fragrant.

Add a piece of hot pot base and fry over low heat until red oil comes out.

Add the prawns and stir-fry over high heat until cooked through.

Add onions and let out the aroma.

Pour in the blanched lotus root slices, lettuce, green and red peppers, and stir-fry over high heat.

Add a little salt, a spoonful of sugar for freshness, a spoonful of oyster sauce, and stir-fry over high heat until the flavors are absorbed.

Sprinkle with white sesame seeds, remove from pan and serve.
