  1. Cut off the shrimp whiskers, use a shrimp gun, and cut off the tail to remove the shrimp line.

  5. Cut lotus root into thick slices and soak in water.

  6. Slice ginger, smash garlic, and cut green onion into sections.

  7. Boil water in a pot, add lotus root slices, lettuce, mushrooms, and green and red peppers in order. Bring the water to a boil again and simmer for about ten seconds. Remove and set aside.

  8. Heat oil in a pan, add onion, ginger and garlic until fragrant.

  9. Add a piece of hot pot base and fry over low heat until red oil comes out.

  10. Add the prawns and stir-fry over high heat until cooked through.
